Hot & Sweet Coleslaw
My husband, who doesn’t care for salads with a lot of mayonnaise, enjoys this slaw along with pulled pork sandwiches.
Equipment
- Large bowl
Ingredients
- 8 c. green cabbage shredded
- 1 c. red cabbage shredded
- 4 carrots peeled and shredded
- 1 yellow onion grated
- 1/2 c. low-fat mayonnaise
- 2 T. mustard
- 2 t. cider vinegar
- 1/4 c. sugar
- 1 t. pepper
- 1/4 t. cayenne pepper
Optional:
- salt and additional pepper to taste
Instructions
- In a large bowl, toss together vegetables.
- In a separate bowl, whisk together mayonnaise, mustard, vinegar, sugar and peppers.
- Toss mayonnaise mixture with cabbage mixture; season with salt and additional pepper, if desired.
- Cover and refrigerate overnight before serving.
