Name: Sweet Corn and Goat Cheese Guacamole
Ingredients: 3 to 5 ripe avocados (pitted and peeled); ½ medium red onion (finely diced); 1 jalapeno pepper or to taste (cored and finely chopped ½ to 1 cup drained sweet corn kernels); ½ to 1 cup crumbled goat cheese; ¼ tsp ground cumin; 1 tbsp fresh lime juice; ⅓ cup chopped fresh cilantro; Salt and black pepper to taste

Serves: 4

▢ 3 to 5 ripe avocados pitted and peeled
▢ ½ medium red onion finely diced
▢ 1 jalapeno pepper or to taste cored and finely chopped ½ to 1 cup drained sweet corn kernels
▢ ½ to 1 cup crumbled goat cheese
▢ ¼ tsp ground cumin
▢ 1 tbsp fresh lime juice
▢ ⅓ cup chopped fresh cilantro
▢ Salt and black pepper to taste

Instructions

Mash avocados in a bowl using a potato masher or fork to your desired consistency.
Add remaining ingredients and fold in well.
Serve guacamole.
